I was in the mood for mexican flavors, but I still needed to eat healthy. I modified a recipe I found in The American Diabetes Association Diabetes Comfort Food Cookbook by Robyn Webb. The original was for pork, but I had ground turkey available. I mixed up some of my homemade taco seasoning to lightly season the meat, and they turned out good!
Recipe:
1 tsp Extra virgin olive oil
1/2 C Yellow onion ( Minced )
2 tsp Garlic ( Minced )
1 lbs Ground turkey
16 6 inch corn tortillas
1 C Mexican cheese blend
3 Scallions ( Thinly sliced )
1 3 oz can green chillies
Brown the turkey in a large skillet. When the turkey is half-done, add the onions and garlic. Finish browning the meat.
When the meat is cooked, mix in the chillies and scallions.
Take two tortillas, and place one on your cutting board. Take 1/2 cup of the meat mixture, and 1/4 cup of the cheese, and place it on one of the tortillas. Cover with the other tortilla.
Brush the top tortilla with olive oil, and place the quesadilla face-down in a hot skillet.
Brush the other tortilla with olive oil, and brown both sides for 45 seconds to a minute - enough to crisp the tortilla a little, and melt the cheese.
Enjoy!
Serving size: one quesadilla.
